I believe most of the nutrition will got lose in the process of dehydration, it will be oxidized. 105 degree, that is not raw food, it's precessed food.
I eat raw food and think it's the healthiest form of food, but NOT because of the enzymes. Why would plants hold in enzymes to digest themselves?! THEY DON'T. Any other enzymes they have for non-digestive uses are typically destroyed in our stomach, from acid and *our* enzymes.
However, raw food is healthier because it's full of vitamins, minerals, cofactors, and other phytonutrients that can be destroyed by heat (or leached out by boiling) and no acrylamides (carcinogens) from frying/baking.
I think it is important to recognize the difference in individuals. Food is not as complex as most believe with the primary nutrient being sugar in one form or another. Cooking certain foods such as beans,carrots, beats releases many vitamins minerals making them available to our bodies as well as breaking down poisons irritants. It also makes them easier to digest any survivalist knows this. Many persons do not tolerate raw foods well. I think just eat both raw cooked.
I think a lot of the dehydrated foods are considered more "transition" foods so that people who are used to a sad diet (standard american diet) can feel like they are getting crackers and familiar things.

The reason I ask is because it seems kinda pointless to do the dehydrating process if the enzymes are destroyed anyway. It is not simple at all, so, yeah, I'd rather relax a little bit and enjoy simple, home-made crackers in my regular oven. To me, truly raw and natural, is the best way to go, and it should be simple. But if we are adding all the complicated stuff of dehydration, then I'd rather have a 10% of the naturally baked stuff in my regular oven. Sorry, if it sounded cynical..
maybe they get destroyed, maybe not. but you gotta commend yourselves that you guys no longer eat a crappy diet! and yeah, it's simply that easy and cool. keep cool! :)

You are right! Raw should be exactly that - raw. IE. How nature gives it to you. Nature packages food exactly right - fruit for example has the right balance between fibre water and sugar - dehydrate it and you need more to fill you up. Its not what nature intended! Also for your comment about the 10% - AMEN! ;)
