ALSO, after that i cut a slice out of the squash for a flat end (you could cut it in half too i suppose, if you really need it to be easier, it'll just take longer) then cut slivers and dice those. the bottom half is a pain to dice though, needing more technique. so i wouldn't worry about that so much and just do what works for you. i peel the bottom half the same way as the top, by the way. using the entire length of the knife for each slice. good luck

when i cut i put my weight into my wrist and push forward at the same time. you can get a lot of force and a good amount of control that way, makes cutting things like these much easier. also after i cut it in half (the same way you did), i peel it with a french knife. you can see a line of lighter colored flesh leading to the rind, try to cut all the way down the squash in one motion, not just sawing away, it's easier when you get used to it. learned this stuff working at a country club ;P
