they do, it's called a gantry/portal mill and it machines the profile from foam or wood for moulding. modelling also allows them to perform Finite Element Analysis before building to test mechanical properties. as excellent as solidworks and inventor are, this seems like an overly complex / inaccurate way to layout a hull. should just be grid co-ordinates for sections
